Yuzu (Citrus junos) is a citrus type fruit from the citrus family.
Yuzu fruits are very aromatic. Its strong scent is different a lemon or lime. The distinctive aroma fascinated the ancient Japanese aristocrats, and many of them planted trees in their gardens.
The fruit was used as a substitute for vinegar and contributed to the Japanese food culture.

The tree grows very slow and takes more than 10 years to have fruits. Old Japanese saying, “Slow Yuzu takes 18 years to have fruit” explains the fact well. Because of this, very few farmers produce Yuzu and the harvest is limited.
